2023 U.S. Championship Cheese Contest First Runner Up which means it took second place out of 2249 cheese entries.  Vintage Cupola is a semi-hard raw milk variety with a unique flavor and texture boasting qualities of a gouda and a well-aged parmesan. Aged a minimum of two years, the texture is smooth and supple with crystallization. The flavor is layered with nuttiness and caramelization.

3 yr Cupola was named after the top or pinnacle of traditional Wisconsin barns. A pinnacle cheese, Cupola combines quality Red Barn milk, a world class cheesemaker and a recipe perfected with the help of experts at the Wisconsin Center for Dairy Research. Cupola is a raw milk cheese that is aged for a minimum of 6 months and is handcrafted in small batches.

Culinary Applications; Enjoy as a snack or appetizer. Great for pastas, salads and risottos. Excellent melting qualities. Pairs especially well with tropical fruits or a bold red wine.

At Red Barn Family Farms, we are passionate about animal health and welfare. We use an old fashioned term for this - animal husbandry. We believe strongly in the value of the small family farm. Because of their size, these farms have a unique ability to know their animals individually, by name and personality and can therefore provide care tailored specifically to each animal. Unfortunately, these types of farms are rapidly disappearing. So we created a unique model that values these farms for what they are and that provides a way for them to remain sustainable economic business models into the future. We hand-select farms that meet our Red Barn Rules, high standards of animal health/welfare and milk quality. We use an innovative fair trade pricing structure for our farms that incentivizes and rewards excellence.

Our model is unique.  We partner with three World Class Cheesemakers in Northeast Wisconsin to handcraft our cheeses. When our fresh, premium milk arrives at their small, artisan creameries, magic happens. Our cheesemakers each have a unique background and family history, but their passion for quality is what makes them part of our Red Barn Family.  Small family farms and small family-owned creameries contribute to a healthy rural economy.
