When purchasing raw honey it is important to understand that honey never goes bad but it can change form by crystallizing. If you prefer your honey in liquid form, crystallized honey can be returned to its liquid form by gently heating it. The best way is to heat the amount of honey you want to use in a small double boiler or placing the whole jar in warm water. Try not to heat the honey above 105 degrees to preserve the nature flora.
