Meadowlark Community Mills Organic Heritage Red Turkey Whole Wheat Flour is a heritage variety of wheat that was widely grown in the Upper Midwest a century ago which originates from the breadbaskets of Europe for centuries, prized for its hardiness, rich flavors, and excellent baking qualities.
Turkey Red was replaced in the mid-1940’s by modern, higher-yielding cultivars. It is theorized that the changes made during hybridization also changed the protein and gluten structure of the grain. This change has made hybrid grain more difficult to digest and it is thought to be the cause of wheat-intolerence in many people.
MCM's whole wheat flour contains 100% of the wheat - the nutrient dense germ, starch filled endosperm, and fiber rich bran and are all stone milled which preserves the integrity and nutritional value of the grain.
